National Ice Cream Day 2015

In case you don't have any social media accounts, yesterday was National Ice Cream Day.  I don't even know if that was a thing prior to.... now - but alas, it was, and I celebrated.... more than once.

I hung out with my BFF and #bffbaby in the afternoon, and she made us a batch of brownies to accompany our ice cream.  That was at approximately 5 pm.

I thought I had the whole National Ice Cream Day in the bag - but alas, there was more!

My husband got off of work with 2 hours to spare before our best local ice cream place closed.  Or - he was supposed to.

With about 15 minutes to spare till closing time, my husband swept me into the car where we were pretty much last in line at the ice cream shop.

I made my order, and Mr. RH ordered the most ridiculous order - a banana split.  Huge, massive hot mess of an order in 90% humidity.  Whatever.

So we wait for a few minutes, closing time passes, and the girl at the window is shouting out "sugar cone, birthday cake."

And again,  "sugar cone, birthday cake."

I'm thinking to myself, "hello, who ordered that damn cone?!"

Oh, right, that would be me.

 Not the same cone.  Because... you'll see.

I take my shame face up to the window and get my cone.  About 2 seconds later, licking my melting prize,  the scoop, perfectly perched on top of the cone, falls off the cone.  Amateur hour.

Directly into my purse and onto my phone, no less.

So, as a rational adult... I reach down into my purse and grab the dang scoop and put it back on top of my cone.  And then I proceed to turn my back to the people eating nearby and discreetly try to lick my phone while attempting to forget every single 20/20 episode where they tell you your phone is the dirtiest thing you own and will likely kill you someday.

Embarrassment aside, we finally grab Mr. RH's banana split and high tail it to the car.  He holds it like the golden ticket and I pretend I don't know the goon with the giant banana split.

Walk into the house, sit on the couch, and suddenly Mr. RH's banana split is leaking all over his lap and the pillow from the couch.

National Ice Cream Day: 2.  RH Family: -0.

Ice cream, if I didn't love you so much, we would be finished.  Alas.... nope.

Creamy Tomato Soup Recipe. YUM.

If you can believe this.... I had never had tomato soup before 2011.  Like - never ever.  I'm not sure if it was because my dad isn't a big fan - or because my mom didn't like it.  No clue, but we never had it in our house growing up.  Probably because we would have turned up our noses at it, because we are so dumb.  For real.

Anyways, I'm not really a chef by any standards... but the tomato soup that follows is so yummy that I ate it for breakfast once this week and considered pouring it into a thermos on another day for the road.

So basically, it's good.

Ingredients

  • Small Onion
  • Couple of Carrots
  • Red Bell Pepper
  • Garlic (I totally use the diced garlic sold ready-to-go in the grocery store)
  • 1-2 T butter
  • Can of Chicken Broth
  • 2-3 large cans of tomatoes
  • Can of tomato paste (OPTIONAL)
  • Balsamic Vinegar
  • Dried Basil
  • Half-carton of heavy cream

Once you've gathered all of your ingredients, get to chopping.


Bonus points if your pepper and carrots are on their last legs.  This is the perfect dish for using up some overlooked veggies from a long week.


Chop chop chop.

I've used a food processor to just pulverize the heck out of them before, and I'm not sure I noticed any difference.  So - that's even easier!  Unfortunately, my new food processor is kinda iffy compared to the sturdy old model I used to have, so I haven't pulled it out much.

The other ingredients... 

  

I know some people are picky about their tomatoes... I'm just not.   I always waver over the "seasoned" vs just plain diced/petite diced tomatoes and have found no reason to commit to either.

So, I fire up my stove and heat a heavy-bottomed pan with the butter inside... and toss in the carrots to cook them down a bit.  Since they are the only crunchy thing in my recipe, I always give them extra time on the heat.


But after a couple minutes, add in the onion, garlic, and red pepper.  
 

Cook cook cook it down till the onions are nice and see-through.

And then - in goes the broth, tomatoes, and basil seasoning. 


The basil likes to float to the top for some reason, so I just give it a nice stir every 15 minutes or so.  

I'm not sure it matters how long you cook it, but I usually end up doing somewhere between an hour and two hours.  Turn it to medium-low (bubbling, but not going to burn the stuff on the bottom), throw the lid on, and wait wait wait.  Go watch a DIY show.  

And then we're back.

Somewhere in the midst of cooking, I decided it needed a little more punch - so I threw in a tablespoon of balsamic vinegar.  You could probably add more, but I was afraid.

And an hour or two later, you've got this bad boy.  And you are impatient, so you probably eat a small bowl of essentially warm tomatoes and veggies.  YUM.


I took mine off the stove for 10 minutes so it wasn't scalding - and then into the blender she went.  I don't have an immersion blender, but it honestly was no big deal in the regular blender.  I had 2 blender-pitchers full, so I just used another bowl as a temporary holding cell.





After that, you've got a delicious pot of tomato-y goodness.  And honestly, you COULD stop right here.  But you shouldn't because extra calories make the world go 'round.



Find your heavy cream in the fridge and throw a couple of tablespoons in.  I've heard horror stories of it curdling when it hits too-hot soup, so I'm always rushing to mix it in and not ruin things.


And then you've got it.  Creamy tomato soup perfection.  Better than Panera's, according to myself and my husband.  But he may be sleeping with the chef, so I'm not sure if he's lying or not.


Bonus points for adding copious amount of cheese and a grilled cheese sandwich to the mix.  And eating it in your robe on the couch at 7 pm.

Red Velvet Dip

Otherwise known as "Honey, who shrunk my pants? Dip"

So, you need something quick and easy to throw together for a holiday party?  Don't worry, I've got you covered.

Here's what you need:

  • Red Velvet Boxed Cake Mix
  • 1 Brick Cream Cheese (I use the low fat version with no ill side effects.)
  • 1 Stick of Room-Temp Butter
  • 1/2 cup Powdered Sugar
  • 1/4 cup Brown Sugar (I've forgotten this ingredient before... didn't kill me).
  • Mini Chocolate Chips - usually 1/2 to a whole cup.
  • Nilla Wafers of Deliciousness

First, get that KitchenAid mixer going.  Cream cheese and butter, WHIP IT GOOD.


The thing about the butter and cream cheese is that, when refrigerated, they can get a little hard.  So a little extra air in the mix never hurt anybody!  Crank that mixer.

So when I read this receipe - I always get tripped up because it calls for 1.5 cups of red velvet cake mix.  Who knows what 1.5 cups of cake mix is?  Well, it's half a box.  If you're me, you'll just double the recipe and use the whole box.  Saves time!



After it's niiice and mixed up, don't be alarmed if your "red" velvet is slightly pasty looking.  Because there aren't any liquid ingredients, it actually takes several hours for the deeper red color to develop.  (The more you know!)

 I always add some mini chips to the mix so the chocolate chips aren't always on the outside.  If you're going for lazy, just throw them all in.  Some people bother to actually make the red velvet into a beautiful ball, but I usually just throw mine in a glass bowl and call it a day.


 Whatever you do, DO NOT buy the store brand chocolate chips.  They suck, melt weird, and are not good.  Name brand all the way.

If you're lazy, throw it in a bowl, chill (or not), and go to town.  Eat it with a spoon while sitting on the couch writing this post.  (Saves the calories of the Nilla Wafers!)


If you want to be fancy.... wrap the dough in saran wrap and chill in the fridge for 2+ hours until it's niiice and chilled, then roll in mini chips.

Apparently I don't have a pic of my pretty finished ball.  Needless to say, it didn't last long.

Bon appetit.  And watch your pants, they magically shrink when you make this stuff. WEIRD.

Add your sugars but not the red velvet yet.  It could turn into a murder scene in your kitchen, so delay as long as possible.

Green Smoothie Monster

So, as you may have inferred from my posts since September, I do very few things each day that are unrelated to A) work or B) wedding planning.

In December, I was perusing the pinterest rabbit-hole when I saw a bride mentioning nutrition as an important part of her wedding planning.

Well, knock me over with a feather, that sounded like a GENIUS idea to me.  Along with readying my heart and my mind for a life with Mr. RH (and working on our relationship together), it only made sense to me that, in wanting to look my best, I might want to think of looking my best from the inside out. 

Enter the "green" smoothie.

I've been eating smoothies for years.  I love fruit (fresh or frozen), and I love an icy, cold thick milkshake-y beverage.  Mmm.

So I googled green smoothies, and promptly disregarded everything I had learned.

For me, eating yogurt is extremely important.  Let's just say that I have a slightly imbalanced system, and yogurt (of any kind) helps keep it in check.  So there's the base of my "green" smoothie.

Now, I know that Greek yogurt is all the rage.  And, on my first go-around, I went for the Greek.  However, I had been reading some kinda iffy reports on how the yogurt is made, and that there is a lot of by-product waste created in the process of making it.  So I downgraded (in price!) to regular and haven't missed it a bit.

And then there were the greens.  I started with spinach.  Then I kept seeing people talk about kale on twitter amongst health-related discussions.  As wikipedia just told me, Kale has lots of vitamin A, K, and C.  Spinach has A, C, and calcium and iron.




This is only my first week using kale, but so far so good.  

If I know I'm not going to use up the ingredients before they go bad, I simply toss a bunch of handfulls of the greens into the freezer in a ziplock bag.  Because the greens are so small, I can put them directly from the freezer into the smoothie with no defrosting.

I use the same greens consistently, but as for the fruits, I like to mix it up.  Typically to coincide with whatever fruit is on sale at the grocery store that week.  This week, blackberries were on sale, as were strawberries. 




If the store is looking particularly paltry when I go (which happens semi-frequently in the fresh fruit area), I just grab a bunch of the cheapest frozen fruit.  When I wake up in the morning, I just throw any frozens into a cup and let them thaw while I get ready.  They're usually ready to blend in 30 minutes or so.

For the actual blending, I use an old mini food processor that's seen better days.  We don't have a blender, and I don't really miss it.  Plus, I like my smoothie really thick, and the food processor handles that better.


Two scoops of yogurt (I use unflavored because it has less calories and also I add plenty of flavor with fruit), and then to the top with greens.  Blend for a minute...

Then add the fruit.


I know some people add ice to thin out the mixture a bit, but I usually skip that step.  When it looks like sludge, you know you've hit the jackpot.

 Mmm, healthy goodness.

I've tried a whole bunch of fruits, and I can't say I'd recommend them all.
  • Pineapple - really couldn't get it to blend all the way.  So, only if you like it quite chunky.  (Gross)
  • Avocado - it was fine, kinda thick and weird, but I'll just leave my avocado for guac from here on out
  • Blackberries - quite seed-y, the seeds are much larger than you think and won't break down from blending
  • Blueberries - delicious but they are kind of a nasty color
  • Mango - YUM
  • Peaches - perfection
  • Strawberries - a little seed-y, but not unbearable
  • Melon - skip it, in my opinion

Now, I have seen on twitter something that reeeeally kinda irks me.  And that would be the juicing trend.

In juicing, you basically take fruit and veggie, remove all the fiber and some of the nutrients, and are left with the sugary deliciousness of the juice.

In making a smoothie, you can actually increase the amount of nutrients absorbed from the spinach/kale/blueberries/whatever.  How?  In essence, chopping them up into tiny bits makes the nutrients more "bio-available" - which means your body is able to use them more easily because they are already broken down a bit and easier to absorb.

Pretty nifty, huh?

I do have to say, that in about three months of doing this I think my fingernails have NEVER been stronger.  I've always had issues with peeling nails, and I am shocked that they seem less bendy lately.  In fact, at work last week I found myself filing down my nails because the length was starting to bug me.  That never happens!

So, in short, I'm pretty pleased with myself.  Doing something "for the wedding" might actually be a good habit for my health.   Go figure!

Creamy Tomato Soup Knockoff

A couple of weeks ago... I got into a real soupy mood.  As in - nothing but soup in my belly, all the time!  Of course, at $5 a bowl my Panera habit quickly drained my wallet.

And so I decided, naturally, that I could make soup just as well as they can.  Obviously


I borrowed from Joy the Baker's recipe and Taylor Takes a Taste's recipe.

I ate a whole loaf of crusty bread in two days with this bad boy... mmm.  I'm thinking I'm going to need another batch asap.

Anybody else in a "soup" mood lately?  I just can't shake it!

Whirlwind in the Windy City

Sooo... where do I start?

I envisioned myself having allllll this free time over the past 24 hours to catch up on my life.  Mr. RH got his wisdom teeth out yesterday and I have for some reason been entrusted to make sure he doesn't die.  It's extremely terrifying.

His dad dropped him off at his apartment yesterday around noon... and the first thing he does is bend over (despite my million protests to NOT bend over) and attempt to take his shoes off.  Big bloody smile later... and I'm the one on the floor begging my brain not to pass out.

If his dad noticed, he didn't say anything.  Which is a bit terrifying, because after 15 minutes I had a feeble Mr. RH feel my forehead and even through the drugs he could feel that I was sweating like I just ran 10 miles.

Anyway, Mr. RH is recovering nicely, I'm smothering him with too much attention, and there was the mother of all thunderstorms (the first of the ENTIRE SUMMER) which kept us both awake at 3 in the morning.  Which gave me the opportunity to ice Mr. RH's face. 


Dear Lord in Heaven, please let us make it out of this alive.  And by us I mean me, because Mr. RH will certainly strike me dead here in a jiffy.  xo, Sarah

So, I was in Chicago with some girlfriends late last week.  It was a whirlwind and so busy, but it was nice to escape on my own for a couple of days.  Even if I was a little sad that Mr. RH had time off too and we didn't get to spend any of it together!

I had several "firsts" on this Chicago trip.

My first trip to infamous breakfast joint Lou Mitchell's.  
It was ok, but really not my favorite.  Maybe I just ordered the wrong thing.

I would also like to point out I walked less than 10 blocks to get there and, because of the humidity, my big, curly hair went completely and totally straight.  Dude, this weather.

We walked all over town - miles and miles and miles.  My feet are still a little sore!

The big adventure of the trip, though, was a trip to RPM Italian.  


Don't know RPM?  Well, you might be the only one.  It is a restaurant featured on Giuliana & Bill.... as in, the restaurant that Giuliana and Bill invested in.

My friend scored us late reservations on Wednesday... so I knew we had to go.

We didn't have any grand expectations of the place.  First of all, we weren't dressed for dinner.  We were dressed for a long day in the car and a hot day in the city.  I was a mess.

So we walk in, tell them we have reservations, and wait.  I start to feel uneasy because I am so underdressed.  The place is gorgeous.

About ten minutes into waiting, an older gentleman breezes through and goes right into the dining room.

"Hey, guys, I'm pretty sure that's Giuliana's dad."  My friends are like, eh, I don't see him, whatever you say.

We get seated, have an amazing waiter, debate over food and drink for ages.

At one point, a man walks by, tries to stop at the table, gets blocked by the waiter, and keeps walking.  Lightbulbs of recognition go off in my head..... the guy is Ari Goldman, fellow RPM investor and friend of Bill Rancic.

My friends are clueless, but I am a dog with a bone.  I explain who Ari is and how I clearly have too much time to watch TV.  Ari comes back from wherever... and chats up the table.  By this point, we are all glowing and well-behaved perfect women.  An unvoiced opinion has been unanimously voted upon: we are going to be perfect and behave and see what happens.


Time goes by, desserts are eaten.  If you are ever in the neighborhood, you MUST have the tartufo.  Not sure what that word is, exactly, but it's a chocolate gelato inside a hard chocolate hazelnut shell.  To die for.


After we finish, who shows up again but Ari.  The girl sitting next to me gathers up her balls and says... so, is the "R" of RPM Italian in house tonight?  

And low and behold, he is.  They are filming in the back and almost finished... he is tired of talking to Papa DePandi about Obama (so  that WAS him I saw on the way in!)... so he joined us at our table.

Before long, the back room opens up and all of the cast of characters come spilling out.  Bill Rancic, several of his close friends, and Giuliana's dad.

(Unfortunately, no Giuliana herself... but this was pretty awesome.)

They all came over to our table and started talking.  There are about 30 people left in the restaurant at this point, but everyone is asking questions and talking to us.  Pretty surreal.

One of us finally gets our wits about us and asks Giuliana's dad for a picture.  My blogging heart seizes with joy.  FINALLY.

Giuliana's dad, Antonio, hops into our round booth like he is training for the Olympic hurdles.  I was nervous he was going to fall but he hopped right over the edge of the bench seat.  

Bill Rancic, standing there with a wall of iPhones and cameras, starts shouting directions.  "Scootch in, smile big, everybody say WE LOVE EDUARDO."


At this point, Eduardo (we're on a first-name basis) pulls out his phone, hands it to Bill, and asks for a picture.

DEAD.  That is my exact emotion.  

Bill, who is directing the wall of cameras, comes up with a brilliant shot.  


No joke.  I kissed Giuliana's dad in the middle of RPM Italian while Bill Rancic cheered me on.

Of course, having used up all our balls for the night, NONE of us would man up and ask Bill for a picture.  We were playing it too cool.

Even though he proceeded to circulate the room and get pictures with EVERYONE else in the place.

And then I choked again the next day at noon, when I just strolled past Bill on Michigan Avenue.  I turned around to go make a scene (and get a picture!) but I chickened out.  He looked like he was enjoying his privacy and there were SO many people out on the street.

So that's what I did last week.  Smooched on Giuliana's dad in the middle of RPM Italian.  At Bill Rancic's urging.

Don't even get me started on the conversation we had after we were leaving the restaurant.  The other girl who did the kissing - we both IMMEDIATELY went into panic mode - um, did you actually kiss him, touch the cheek, was that alright??

Haha, we were just following directions!

Just Don't Do It

A couple of weeks ago, I saw an ad for Red Velvet yogurt.  My brain couldn't even process what that would be like.

I was so excited - because the only thing in life more delicious than cheesecake is red velvet cake.



(I had to beg for that pouty lip.)

Yeah, don't do it.

Trust me on this one.

It tastes like berries when you get it in your mouth.... then a weird red velvet aftertaste.

Somethings really are too good to be true.

PB Smackdown

I was on this crazy diet for a few weeks. No, I wasn't trying to morph myself into a supermodel but I was on a mission to cut out the sugar.

Now that I've loosened my obsession a bit, I've got a new favorite snack.

Rice cake with peanut butter.

I know, if you are the former me you are wrinkling your nose.... but I'm telling you - it's heaven on a cracker when you've been eating lettuce all day.

Anyways, I was at my BFF Meijer (that's a grocery store for you non-midwest types) when I stumbled onto a connundrum.


On the left, we have "Simply Jif" which is a reduced-sugar version of the always delicious Regular Creamy Jif.

Side Note: If you are a Skippy fan I can't even talk to you right now. It's like I don't even know you.

So, in my eagerness to be the lowest-sugar version of myself (it's ok, you can laugh. I know I regularly eat cake for breakfast. Ha freaking ha.) I decided to try Simply Jif.

And so I tried it. Lemmie just say.... Dear Jif, whyyyy did you try and mess with perfection? No bueno.

And the kicker? You save 1 gram of sugar by switching to the low-sugar version. ONE GRAM.

Just say NO to Simply Jif.

And, while we're at it.... do you have a favorite peanut butter brand? Or are y'all on Team Jif with me?? And - crunchy or smooth?

Talk peanut butter to me, please.

And don't forget to skip the Simply Jif.

Cake Balls by Sarah

Spent the majority of my day yesterday making cake balls. I will spend the rest of the week trying not to eat them before Saturday.

What's Saturday? A bachelorette party for one of my college roommates. A surprise party, I might add.

Trying to work out the logistics when all of the attendees live in different cities is a bit mind-boggling.

Hence why I need a nap at 10 am on a Tuesday.

Don't Hate Me.

A few weeks ago I was reading one of my new favorite blogs, A Kapple a Day, and she posted the most delicious looking recipe for Red Velvet Cookie Cakes.

I had a red velvet cake mix burning a hole in my cabinet so we all know that I had to make them, right?


Seriously, whatever you do, don't make these things. They're so freaking delicious I can't even handle it.

And now that they're gone I like to pull up this picture and dream about them.

Does that make me a pathetic food addict?

Cheesecake: Harder than It Looks

Soo... once upon a time I saw somebody tweet about making a pumpkin cheesecake from a Bethenny Frankel recipe.

Consider me sold.

So I went about making the recipe and it truthfully wasn't hard. Mix, mix, mix, done.

But then it came time to cook it. And I realized I no longer owned a springform pan that you're "supposed" to bake cheesecake in. Oops. No worries, used a cake pan instead.

But then the internet was all "turn down the temp on the oven" and "bake it in a water bath" and all this other stuff. And I got nervous. All these variables!

But I sent my cake off into the oven with high hopes. I did everything just like the internet told me to!

So much hope in that oven.

I let it bake and bake and cool forever....
Not gonna lie, I thought I had done pretty good. The top wasn't hard or crusty so I was feeling good.

And then I cut into it.
#bakingfail

Totally raw on the inside. Basically pumpkin cheesecake batter. (Which is delicious... but had been warmed in the oven and cooled on the counter for hours. Can you say salmonella?)

Therefore... I ate the top off the cheesecake and dumped the rest into the trash.

Such a waste of cream cheese.

I just don't think I have the "good cheesecake" gene in me.

Have any of you had success with a cheesecake? Or am I just functionally cheesecake challenged?

Friday Obsession

Caramel apples.

I could eat them all day long, preferably with sprinkles and nuts.

And if you want a quick/easy way to make caramel apples... you gotta buy these individual "sheets" of caramel that they sell at the store. I think I paid $1.99 for 5 sheets.

Talking About Food. My Favorite Subject.

Today, we talk food. I suggest skipping this if you don't want to be starving. Cause I just ate and now I'm starving.

Breakfast for SURE! I love homemade waffles - not Belgian waffles, can't stand those.

And you can't rule out how much I love French toast and pancakes. And bacon. Who doesn't love bacon??

First off, you don't like frosting? I don't know if I can even know you anymore.

I dislike frosting from the grocery store... that overly-sugary, gets hard/crunchy on the outside. GAG!

I love love a cream cheese frosting and I really love a whipped frosting... although I'm gonna be honest - I'm not a fan of frosting out of a can. But I wouldn't turn it down, either.

I love red velvet with cream cheese frosting, and I also love vanilla with vanilla. I shall test my cupcake love next week in Nashville where I will attempt to come up with some more favorites. I promise I'll share!

I love them, I crave them... and if I ever try a dessert I like from a friend I immediately set about begging for the recipes. I actually have a ton of recipes that I haven't shared on here that are seriously amazing... perhaps I should share some of those coming up??

I make a "Better than Sex" cake that is seriously... amazing.

And - I bake all the time. I love the smell of a baked good and let's be real - I love to eat.

Also... I don't eat out very often. Definitely less than once a week, maybe even more like less than once a month. My friends always say this is one of the reasons I'm able to say thin - cause I know what's going into my food if I make it at home.

My favorite thing to cook? I'm not a huge cook. I'd rather bake cookies.

If I had to pick I'd say I make fajitas with Mexican rice as my signature dish. It's super easy and it's always a hit.

Gosh, this is tough! Probably a big steak, some couscous... followed by cheesecake and ice cream and cake and every other dessert I can't think of right now. I'm more of a dessert girl.

First of all, this question cracked me the hell up. I feel like you know me so well.

I'm definitely not as thin as I used to be... but I'm working on it.

I usually give into my cravings. A bite of this, a little of that. The more I obsess in my mind the more I know I'm going to gorge later. Sarah = no self control.

But, as I said earlier, I rarely eat out. I cook my own meals so I know what's in them and can make substitutions when possible. I also try and drink before a meal so I start off feeling fuller than I really am.

And when I want to give into boredom snacking (which happens to me ALL THE TIME!) I try and distract myself with a project. Which is why I have so many half-finished craft projects in my life!

Cookies or cupcakes. It's a toss up. My cupcakes are usually just made with a box mix though - I'm not that spectacular of a baker!

Oh man - after talking about red velvet and vanilla cupcakes in the earlier questions... I completely forgot about carrot cake. I LOVE carrot cake. Damn.

Vanilla on vanilla. Red Velvet. Carrot cake. Definitely my top 3.
