Soo... once upon a time I saw somebody tweet about making a pumpkin cheesecake from a Bethenny Frankel recipe.
Consider me sold.
So I went about making the recipe and it truthfully wasn't hard. Mix, mix, mix, done.
But then it came time to cook it. And I realized I no longer owned a springform pan that you're "supposed" to bake cheesecake in. Oops. No worries, used a cake pan instead.
But then the internet was all "turn down the temp on the oven" and "bake it in a water bath" and all this other stuff. And I got nervous. All these variables!
But I sent my cake off into the oven with high hopes. I did everything just like the internet told me to!
So much hope in that oven.
I let it bake and bake and cool forever....
Not gonna lie, I thought I had done pretty good. The top wasn't hard or crusty so I was feeling good.
And then I cut into it.

Totally raw on the inside. Basically pumpkin cheesecake batter. (Which is delicious... but had been warmed in the oven and cooled on the counter for hours. Can you say salmonella?)
Therefore... I ate the top off the cheesecake and dumped the rest into the trash.
Such a waste of cream cheese.
I just don't think I have the "good cheesecake" gene in me.
Have any of you had success with a cheesecake? Or am I just functionally cheesecake challenged?

I have NEVER been able to make a good cheesecake. NEVER! And I've tried a LOT. I've heard that the water bath is the best way to cook them, although I've never actually done that, haha. I'm surprised yours wasn't fully cooked! How weird. Boo.

Good for you for trying! Cheesecake scares me, therefore I just buy it and then eat the entire thing.
I'm planning on attempting my VERY FIRST cheesecake this weekend. I'll blog about it. It could be an epic fail. Yours looks so pretty though - at least it made good pictures!
I make cheesecake for my husband. He loves it -- I despise cheesecake. having the springform pan makes a big difference. Don't give up =)

This is exactly why I don't make cheesecake! It stresses me out way to much. But, I mean, at least you ended up with you know, pumking cheesecake batter.
I have been baking pumpkin cheesecake for forever and I do not use a water bath or spring form pan! If you want the recipe, let me know :) it has never failed me!

I can barely boil water, so I would never attempt cheesecake, but yours looks very pretty :)

def get yourself a spring form pan. you can pick them up at Ross or TJMaxx or such stores for like $10 and they are also very good for making cake and other things. Hope it works out for you
I have this cake on my to make list. You should try again once you get a new spring form pan.
I've been eyeing this cheesecake on her website for awhile now...however, I am less than an Emeril in the kitchen, so I think mine would turn out worse than yours! At least you gave it a try, though. And it looks super pretty! :)

I give you serious points just for trying -- any recipe that would mention baking something in a water bath, etc., would totally freak me out! (The Internet is awesome for freaking me out, especially when attempting a complicated recipe.)
And agree that it looked gorgeous! At least you got some pretty pictures? And a blog post out of it?
It had so much potential! I've read a lot about how hard cheesecake can be... Please share if you ever make a successful one! I'm too scared!
