I Just Wanna Eat.

Over the past month or two, I have become obsessed with the idea of a good, home-cooked dinner. It doesn't have to be 100% healthy because that takes all the fun out of life - but I just like the idea of having a nice, warm dinner - especially when it's freezing outside and I just want to eat something warm to get warm.

But I have to admit - I am NOT good at this whole thing. I have a nice, big kitchen (well, not as big as when we had our own home and were not living in this rental nightmare.. but whatever) and a ton of meat in the freezer... and I still can't manage to make dinner.

I follow recipe blogs with amazing recipes... and still.

I never to seem to have enough fresh ingredients or any ingredients to make the meal... so I usually revert to my basic meal repertoire.

Seriously, snoozefest.

If you are wondering, my repertoire is (get excited. or not.):
  • Pepper Steak with Rice
  • Bourbon Chicken with Rice
  • Beef Stew (which I adore but no one else in my family will even touch. Which is fine because MORE FOR ME!)
  • Various Spaghetti/Baked Spaghetti/Stuffed Shells Recipes
Seriously, that's all I can think of at 7 AM. Sad, but true.

So, lovely readers. Have I mentioned how lovely you look today?

If there is anything that my husband and I are stuck in it is dinner and what to have. I will make a call to him most days and ask what he feels like. We both just hem and haw. Sorry I can not be of ANY help. Good question on your part.

Check out Mark Bittman's Minimalist column on nytimes.com. He's got GREAT recipes with short video tutorials. It's awesome and the recipes always turn out well.

Auntie Holly's Chicken Wings

need:
Chicken Wings
8 Oz. Soy Sauce (half a reg. sized bottle)
3/4 c brown sugar
3/4 c white (granulated) sugar
garlic powder

First, separate chicken wings by the bone (i admit, I am lazy and skip this step..or eliminate all together by buying "party wings" which come in a bag and come separated)

Put wings in a glass or other casserole dish with deep sides. Vigorously sprinkle garlic powder on the chicken wings.

In a bowl, mix together the 2 types of sugar. Using hot tap water, melt the sugar until it is a liquid. It will still be grainy though, but thats ok. Mix in 8 oz. of soy sauce (really, just eye ball it, about half a bottle)

Pour soy sauce mixture over chicken. If you so choose (I usually do) reserve a little bit of liquid to pour over some white or brown rice.

Bake at 375 for approx. 2 hours or until chicken is cooked thoroughly. Every 30 min. or so, stir them up.

*easiest recipe ever, and also, MOST DELICIOUS) Seriously, try this and you will be thanking me later. Best part is its only 15 min. of prep time at most and then you just let them cook!

*if you be made with boneless chicken breasts instead of chicken wings. personally i prefer the wings (especially when made for guests) but the chicken breasts are still yummy

This is my favorite, and it's definitely comfort food!
Chicken Ritz Casserole

1/4 c. chicken broth
1 (3 lb.) stewing chicken, cooked and chopped
1 pt. sour cream
1 can cream of chicken soup

Combine above items and place in a casserole.
3 c. Ritz crackers, crushed- you can do this right in the sleeve
Melt half a stick of butter with crackers and pour over top of the chicken mixture. Bake at 350 degrees for 20 to 25 minutes.

Have you tried www.kraftrecipes.com? It is great because you can type in 3 ingredients that you have on hand and they will give you recipes that include those ingredients. I get most of my recipes form this site. We tried this one lat night. It was super yummy.

I'm really into some good homecooking too...but I find myself at home and missing an ingredient and then it's all over! I will NOT go back to the store! I guess I need to plan better. I love soups right now and those are generally easy. I am so glad you said something about project runway I had NO idea!

just made this tonight for the first time...it's amaze-balls (the hubs agrees) AND a weight watchers meal (if you're into that kinda thing)

2 baking potatoes washed and thinly sliced
1 lb lean ground beef (or ground turkey, chicken, venison [I used venison])
1 packet taco seasoning
2 green bell peppers chopped
1 can diced tomatoes
1 cup low fat shredded cheese

Preheat oven to 350 and spray 13 x 9 pan with pam

In large skillet cook peppers and meat till meat is brown - about 8 mins

Add tomatoes and taco seasoning and mix

Alternate layers of potatoes and meat mixture till full

Cover with foil and bake for 40 mins

Uncover, top with cheese, and bake for 10 more mins

I make vodka pasta for my friends a lot & they all love it (as do I - boozy dinner, yum!). My recipe is at the bottom. Real Simple has a great bunch of recipes too - I love their chicken lettuce cups, super easy & delish. Good luck cooking - I get in ruts too, so I'm going to mark down some of the other girls' recipes!

I'm also stuck in a bit of a cooking rut right now...I usually just opt for whatever is easiest, like stir fry or mac and cheese casserole : ) I'm definitely going to try out some of the links everyone posted for some new recipes!

I am so jealous if you have a big kitchen! Mine is seriously tiny, and I prepare every meal I eat from it. Hosting dinner parties is rough with such a small place!
