Hello, Saturday! Glad you could finally show up, after the longest week of my life.
Anyhow, Becky and Summer are having a little bake-off at Summer's Cakes and, me being the baker that I am, I couldn't not participate. So I thought I'd get my submission in right at the deadline... because I'm a planner like that.
Now this isn't really the most gourmet or complicated cake, but it is seriously quick and easy. Which makes it a winner in my book.
Here are the ingredients:
- Boxed White Cake Mix - any brand will work
- 8 ounce cream cheese - low fat if that appeals to you
- 12 ounces Cool Whip
- 1 cup powdered sugar
- 1 carton strawberries
1. First, bake the cake per the boxed directions.
2. Throw the cream cheese into the mixer with the powdered sugar.
3. Slowly add the Cool Whip and fold in by hand.
4. (Optional step: If the top of your cake is very mounded, you may want to slice off the top to make it flat. This will help for the next step.)
5. Spread the mixture on top of the cake.
6. Spread the strawberries over the entire cake.
7. Eat!
Like I said, it's not exactly gourmet... but i promise you that it will get eaten.

Anything that has cream cheese is good in my book. My mom makes something very similar to this and it is SO delicious!! :D
