New Favorite Dinner Recipe

As I've blogged about before, I really dread dinner time. As much as I like to eat, cooking stresses me out.

Baking, not so much... but cooking really wears at my nerves.

A few weeks ago I found a recipe from Allrecipes.com called Brooklyn Girl's Penne Arrabiata. It's my new obsession.

It's easy even though it does have a few steps... but the leftovers are fantastic and I can usually make it with just the ingredients I have on hand.

All you do it bread some chicken breasts (dried bread crumbs, maybe a splash of onion and garlic powder) and fry them up in a pan with a bit of olive oil. Mmm.


Cook some pasta of your choice:
And make up a quick sauce. Mine has garlic, some red pepper flakes (I didn't measure yesterday and it was hot hot hot) a can of diced tomatoes with garlic and oregano, and a tiny can of tomato sauce.


And toss the whole thing together.


Seriously, this is delicious and it reheats perfectly. Maybe even better than the first time around.

So... it's 10 am and I'm already wondering what's for dinner today. Why does dinner stress me out so much?

This is one of the main reasons I eat to poorly! Cooking dinner stresses me out too - I'm tired I just want to relax with some TV and a drink. Instead I'm biting my nails over what to cook! This looks really good!

Yum! My husband is obsessed with Arrabiata sauce - he orders it whenever it's on the menu. I'm definitely going to have to make this for him! Thanks for posting!

Oh, you are not alone in this! Cooking stresses me to the max, too. But I love to bake. I'll have to try this for sure. Looks yum.

Yum! This looks so good! I do have trouble with cooking dinner at times. My husband is very picky, so it limits what I can cook! I think he would like this! Tonight we are having a Paula Deen recipe. Its chicken wrapped in bacon covered with a really yummy sauce and served over rice!

Last week I made a chicken taco chilli from Gina's Skinny Recipes (skinnytastes.com) and it was amazing. It is a crockpot recipe so you can cook it, shred the chicken, mix it back together and you are ready to go.

This looks so good and easy! I hate to cook dinner but enjoy baking. Sometimes when I get in the spirit I'll make something but that is once in a blue moon. I'll have to try this dish. :) Thanks for sharing!

Try having to make dinner every night for hungry hubby and three ravenously starving little ones! I do not enjoy cooking. (Picky eaters in the house are to blame)...and I'd much rather be (or need to be) crafting/decorating/photographing or tending to my boutique.

How funny that I made almost the same thing last night and took pics to post on my blog.

Yours looks yum and I like how it's an all-in-one dish. Makes it easier to serve to the kiddos, for sure.

I'm with you - dinner time completely stresses me out! I stand in front of the pantry waiting for something to jump out at me. Never does. ;)
