Little Debbie Lies

After all the sweet and sassy comments on my post about these lovely babies, I have to clear up some rumors. Number 1: Yes, the cookies are fattening and delicious. No low-cal goodies here, move along.

Number 2: My cookies make Little Debbie Oatmeal Creme Pies beg for mercy.

You see, after I learned how to make these cookies, I was in a grocery store and saw the Little Debbie version. After the intense craving hit me, I brought a box home. I only ever ate 1 of the pies and even then I wasn't so sure I was going to finish it. The homemade version is 1000x better. It's really no comparison.

And now, before any more of you blaspheme about how these are "like" Lil' Debbies, I give you: the most delicious oatmeal sandwich cookie recipe ever.

Oatmeal Sandwich Cookies
1. Cream together 1 cup butter (soft) and 1 cup shortening (which is Crisco, for those of you who are wondering what the heck shortening is read: me).
2. Beat 4 eggs into mix.
FORGOTTEN STEP: Add 4 cups light brown sugar, packed, into the mix.
3. Sift together 4 cups flour and 1 tablespoon baking soda.
4. Add 4 cups quick oatmeal and the flour mixture into the mix.
5. Stir in 2 teaspoons vanilla.
6. Wrap mixture and chill for one hour.
7. Pinch off dough and roll into very small balls (maybe 1/2 TBSP).
8. Place balls on a lightly greased cookie sheet.
9. Bake at 350° for 7-9 minutes. Cool completely.
Cream Filling
1. In a saucepan, combine 1/3 cup flour and a dash of milk to form a paste. Add a total of one cup of milk slowly. Cook over medium heat stirring occasionally until thick and smooth. COOL.
2. In another bowl, mix 1 cup soft butter, 2-2 ½ cups of powdered sugar, 1 tsp vanilla, and a dash of salt. Cream until light and fluffy.
3. Add in flour/milk mix 1 tablespoon at a time. Beat until smooth.

*This recipe makes about 100 cookie sandwiches – may want to cut it in half.*
*Make sure to use butter where stated - not margarine.*


I'm not gonna lie - they are a bit time consuming to prepare. But if you make this large of a batch, you can freeze some of them and save them for a rainy day.

Wow, I feel tons better now that I've got that off my chest... I think I'm going to go eat a cookie now. Yay Friday!!
