Wakey-Wakey, Time for Cake-y!

Alternately Titled: Cake is the Only Thing That Gets Me Out of Bed in the Morning

I'll admit it: I like to start my day with carbs. A big, preferably warm, pile of carbs.

When I was a youngster, I discovered that pretty much nothing is as delicious in the morning as a slice of plain yellow cake.

These days, my tastes have evolved. Very slightly.

I found this Crumb Cake recipe back in high school an in oooold cookbook. Unfortunately I have zero clue which cookbook... so recipe-stealing FTW!

Super-Simple Crumb Cake
Topping Ingredients: (You can double this as I halved the original recipe)
1 Cup Flour
1/4 C Sugar
1/4 C Brown Sugar
.75 tsp Cinnamon
1 stick Butter or Margarine, Softened

Cake Ingredients: (Makes 2 8-inch cakes)
2 1/4 C Flour
2 1/4 tsp Baking Powder
1 1/4 C Sugar
1 stick Butter or Margarine, Softened
3 Eggs
3/4 C Milk
2 tsp Vanilla Extract

Directions:
Preheat oven to 350.
In a small bowl, combine the crumb topping ingredients. Cut in the butter. Set aside.

In another bowl, beat butter and sugar. Add eggs, milk, and vanilla while continuing to beat the mixture. Add dry ingredients and mix well.

Pour the batter into 2 cake rounds which have been greased and floured.

Drop the crumb topping onto the top of the cakes and gently press down the mixture to "stick" it to the cake.

Bake for 40-ish minutes or until a toothpick inserted into the center comes out clean. Cool on wire racks.

Enjoy.

I'm all for pumpkin pie in the morning. I love it! Not too heavy, but there is the slightest amount of protein to make me feel only half bad about eating it. :)

I have such a craving for cake now! I'm also a carb queen, so I start and end my day with a huge chunk of carbs. I usually have cereal for breakfast, but I am guilty of eating cake, cookies, or something similar if we have any in the house! How can you resist?

Must try this over the weekend. Made one last week that SERIOUSLY was only 1/2 inch high! (Tasted delicious, but hello, it was not crumb PANcake I was after!)
